Ingredients
4 medium zucchinis
1 lb (450g) ground beef, turkey, or sausage (you can substitute with plant-based meat for a vegetarian version)
1 cup cooked rice or quinoa (optional for added texture)
1 small onion, finely diced
2 garlic cloves, minced
1 cup marinara or tomato sauce (plus extra for serving)
1 cup shredded cheese (mozzarella, cheddar, or your favorite blend)
1/4 cup grated Parmesan cheese (optional)
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp salt (or to taste)
1/4 tsp black pepper
2 tbsp olive oil
Fresh parsley or basil, chopped (for garnish)
